Baking on a boat isn’t quite the same as in a house. You may not have an electric mixer, your oven might have a hot spot due to its small size, or you might not even have an oven.
Fear not! With a few quick tips and some boat-friendly recipes, you can have delicious sweets to nibble. And it’s oh-so-worth it to have something yummy on board.
No electric mixer? Recipes, like this one, that use oil instead of shortening are much easier to mix by hand, with the added bonus of oil not requiring refrigeration and being slightly healthier.
Hot spot in your oven? A baking stone (Amazon) will do wonders to even out the temperature.
No oven? No-Bake cookies don’t require an oven, or an Omnia Stove Top Oven (available on Amazon) is an easy way to bake cakes, brownies, bread, casseroles and more on the stove top with great results.

Peanut Butter Cookies
Ingredients
- 1 cup brown sugar or white sugar
- 1/2 cup canola oil or vegetable oil (olive oil has too strong a flavor)
- 1 cup peanut butter (smooth or crunchy)
- 1/4 teaspoon salt
- 1/2 teaspoon vanilla (optional)
- 2 tablespoons milk or water
- 1 egg
- 1-3/4 cups flour
- 2 teaspoons baking powder
Instructions
- Preheat oven to 375° F.
- In medium bowl, mix brown sugar, oil, peanut butter, salt, vanilla, milk, and egg. Add flour and baking powder and mix well.
- Make 1” to 1-1/4” balls and place on greased cookie sheet (if you don’t have a cookie sheet, use a double sheet of aluminum foil). Use fork in a crisscross pattern to flatten. Bake for 9 minutes at 375° Remove from cookie sheet to cool.

Thank you! I’m not a boat dweller but currently in a second winter home in Mexico that is much smaller and far lesser equipped than my kitchen at home. I don’t have a hand mixer here and with only a toaster oven and a mini cookie sheet to bake with, this was THE perfect recipe for PB cookies! Gracias from myself and all my grateful neighbours!

Thank you for a good receipe. Oil works just as well as butter. I added a touch of my own to half the batch. Just a touch of Molasses. Um um good.

I have a conventional, electric stove and never have a problem with baked goods. Today was not my day to bake peanut butter cookies using oil instead of Crisco. I made a batch 3 days ago using my usual recipe. Perfect! Today, this one using vegetable oil is a mess!. Cookies crumble when you touch them😢 My original recipe uses baking soda. This one baking powder (mine was not outdated)
Newly opened pure vanilla=bland, no flavor cookies. Any ideas what could have gone wrong??

Did you use a different brand of peanut butter? That would be the most likely cause of a different flavor, unless you used an oil that has a flavor to it. These should not be crumbly — crumbly usually means too much oil or fat, so I’d think that maybe it was the peanut butter having more fat. I use either Peter Pan or Skippy.
