Ingredients
1cupbrown sugar or white sugar
1/2cupcanola oil or vegetable oil (olive oil has too strong a flavor)
1cuppeanut butter (smooth or crunchy)
1/4teaspoonsalt
1/2teaspoonvanilla (optional)
2tablespoonsmilk or water
1egg
1-3/4cupsflour
2teaspoonsbaking powder
Instructions
Preheat oven to 375° F.
In medium bowl, mix brown sugar, oil, peanut butter, salt, vanilla, milk, and egg. Add flour and baking powder and mix well.
Make 1” to 1-1/4” balls and place on greased cookie sheet (if you don’t have a cookie sheet, use a double sheet of aluminum foil). Use fork in a crisscross pattern to flatten. Bake for 9 minutes at 375° Remove from cookie sheet to cool.
Notes
Note: If you first measure the brown sugar, then the oil, then the peanut butter, you won’t have stuff sticking in the measuring cup.
