An airpot, like any good thermos, can be great for keeping cold drinks cold and hot drinks hot. But its convenient spout system makes it less likely to spill—always a benefit while cruising.

I have two Air Pots. They end up having no end of contents: regular and decaf coffee, coffee and hot water, hot water and chicken stock.
Eye straps with bungee along the lockers above the galley counter, bungee, and non-skid on the counter keep them in place even in sporty conditions.
Getting them really clean does require a bottle brush, but having one or two of those is handy in the galley anyway.
