As much fun as it is to make everything yourself on the boat, sometimes there are a few good “cheater” staples that are really nice to have in your pantry. I’m talking about corn tortillas. Yup. Those packaged goodies you can find in the States and a lot of other places. And I tell you, they make a really big difference.
So, once you’ve gotten yourself anchored, you’re talking about dinner time. Or lunchtime. Maybe breakfast–depends on your passage. And if you have some of these corn tortillas in the pantry, dinner, or whatever meal you want, to make is a total snap.
Probably it might be the sort of thing you don’t want to look at the ingredient list too closely–although I have and it doesn’t look too egregious. But these corn tortillas–and personally, I found that the white ones last longer than the yellow ones or the blue ones– they last for a super, super long time with no refrigeration required.
Pick up a couple packs at the grocery store. You can use them to make quesadillas. You can use them to make tacos. You can cut them up into wedges and fry them and you’ve got homemade tortilla chips. You can turn those chips into nachos. Corn tortillas are a brilliant pantry staple. And one thing that I really wish I had bought a whole lot more of before we left Panama.
Sometimes having cheater ways to make a fast dinner can make the difference between being happy with what you turn out in the Galley and kind of ripping your hair out a little bit. Rather than resorting to cheese and crackers one more time (not that there’s anything wrong with that; that’s a pretty darn good dinner in my book) if you have some corn tortillas aboard you can make all kinds of really super interesting dinners without any fuss whatsoever.
Pick up a couple packets of your favorite corn tortillas at the grocery store, stash them on the boat, and you will be thankful that you did. I can’t wait to share an anchorage with you when maybe we’re sharing our favorite tortilla recipes. Or what we stuff into those tortillas and it gives us a chance to toast to this incredible lifestyle that we get to live.
