For years, I’ve used a “Collapsible Dish Drainer with Drainboard.” Cheap and easily available. Bought mine at Target, but here’s a link from Amazon :

Folds down to nothing. Will just barely wedge into the larger area of the sink on my Gemini 105Mc catamaran, but I usually just set it on the counter or floor … often in the cockpit for quicker drying

This has the removable closed bottom to catch the water drips from the dishes

Also use the “Joseph Joseph Wash and Drain Dish Tub” : Integrated plug and strainer to easily strain food particles before draining into the ocean. Fits perfectly into the larger side sink on my Gemini 105Mc catamaran. I usually wash dishes while comfortably sitting in the cockpit, watching the sea life.
