Preserved lemons-
Cut lemons in quarters or halves.
Stuff into a jar and top off with lots of sea salt or kosher salt (it will take a lot)
Fill with lemon juice and secure jar.
You can leave them out to preserve or, to speed up the process, transfer between freezer and fridge every day or so for a week or two.
BBQ pulled Jackfruit-
Ridiculously easy!!
Drain canned jackfruit and sauté in skillet to heat through. Break up the pieces with a wooden spoon so it resembles pulled pork.
Pour BBQ sauce over it and heat through.
It’s great on a burger bun with tangy, vinegary coleslaw.
