May I suggest wooden dishware as a fourth option?
We set our liveaboard galley up with some 9 x 14 acacia wood rectangular platters widely available from Zassenhaus; these do nice double duty either as individual plates or as serving platters, and because the are rectangular, they easily stay in place nested on their sides; the rectangular shape also fits more nicely into our galley sink than would large round plates. We also kept some old thick wooden bowls that (salad bowl size) and a few larger ceramic Japanese soup bowls (okay, these are loud and breakable, but we like them and we use them so frequently that we are willing to have them break over time; we only keep two out at once, and the smaller wooden bowls nest right in with them).
For drinking, we ordered Yeti mugs with mag-slide tops. This way, one cup type is good for everyday use below and also in the cockpit or on a hike, etc. We even had them custom imprinted with our boat name.
This basically covers all our needs.
We love the wooden platters and bowls. Easy to clean, far more sanitary than you might guess, QUIET, naturally somewhat non-skid, reasonably light, very long lasting. Of course, they don’t take well to long soaking.
I grew up with Corelle, and I must confess my personal distaste for its appearance and its sharp clinky sound, and the many flint-spearheads-of-death shards that result when it does break. But I don’t begrudge you your tableware of choice.
