A tasty hot dip terrific for St. Patrick's Day or any cool day on the water. You can even make a dairy free version that's still delicious.

Ingredients
2/3cupshredded Swiss cheese
1cancorned beef(12 ounces)
¾cupsauerkraut(well drained)
¾cupmayonnaise or Miracle Whip
1/3cupThousand Island dressing
2tablespoonshorseradishor to taste (may omit)
1/8teaspoonground pepper
Instructions
Preheat oven to 400° F.*
Reserve a little of the cheese for topping. Mash the corned beef up in a bowl, then add all the other ingredients and mix well.
Spread the mixture in a 9” pie pan or other baking pan and top with the reserved cheese.
Bake for 10 minutes or until the cheese is melted and the mixture bubbling.
Serve as a dip with crackers, pita chips or chunks of rye or pumpernickel bread.
Notes
*If you don't have an oven, you can warm the dip mixture in a small pan on the stove over low heat until the cheese is just melted. DAIRY-FREE VARIATION for those who can't eat cheese: Omit the cheese from a portion for them and heat in a separate small ovenproof dish. Not quite the same, but still excellent reports from my husband who is highly allergic to milk products.
