More Small Cookie Sheets

Cookie sheets that fit in boat ovens are always a big topic.  One of the first posts here was about Chicago Metallic ones available on Amazon, and that post remains one of the perennial favorites.  But I’ve had plenty of questions about other ones that might be available — ones in stores, less expensive ones, all-aluminum ones, stainless ones and so on.

So I’m always on the lookout . . . and was surprised to find three small ones in Walmart.  I quickly snapped photos with my phone, hence the less-than-great quality.

The two above are 9″ x 13″ pans (inside dimensions, the total size is about 9-1/2″ x 14″), one nonstick and the other aluminized steel.  They are both less than $5.  While I haven’t bought either of these, I have purchased a few other “Mainstays” (Walmart house brand) baking pans and it’s fair to say that they are economy pans — fairly thin, susceptible to warping and sticking (even the nonstick ones) but inexpensive and potentially a good deal if you rarely use a cookie sheet.  If you use one frequently, I suggest looking at others available.

Cookie-sheet-2The other that I found — right next to these and about $10 — is also 9″ x 13″ and solid aluminum.  Made by Nordic Ware, it costs about $10.  It’s a much heavier pan and will bake far more evenly and is unlikely to twist or warp over time.

Aluminized Steel vs. All-Aluminum

So, which is better?  There are pros and cons to both.

The steel core in aluminized steel gives it better heat retention (watch out for hot spots if the pan is thin), but if the aluminum coating gets scratched, rust can form on the steel.

Solid aluminum does not conduct heat as well and some complain that it’s hard to get cookies to brown on the bottom as a result.  On the plus side, the pans won’t rust, even if scratched.

A stainless cookie sheet would be ideal — stainless conducts heat well and high-quality stainless is pretty rust-resistant.  However, I’m still looking for a stainless cookie sheet in a size that will fit in most boat ovens — I have never seen one.  If you know of one, please leave a note with brand.

    Stainless steel cookie sheet. Allclad sells them. Pricey, but nice.
